VEGAN COOKIE DOUGH BALLS
Remember licking the spoon after mixing together some delicious cookie dough as a kid? The nostalgia of it all would get anyone yearning for their childhood--maybe even salivating at the thought! Well, this vegan, gluten-free recipe for everyone’s childhood fave will be the best #throwback you’ll ever have. Oh, and did we mention they’re good for you too?
These yummy dark chocolate cookie dough balls are jam packed with nutrients. The dough is made with a mixture of almond & coconut flour. One cup of almond flour contains over 100% of our daily vitamin E intake. So, your body will be set for the day to better manage blood sugar, heart health and even preventing certain cancers. Imagine--less sudden sugar spikes and lows, and all those other added health benefits? You might just be snacking on these everyday.
That’s not even to mention the healthy addition of coconut flour and oil. Both of which work together to increase good cholesterol and fight against bad bacterias and viruses.
So how do you make this delicious, healthy snack?
Ingredients:
1 cup almond flour
½ tsp of salt
½ cup coconut flour
1tsp of vanilla extract
1 tbsp of coconut oil (make sure to melt it)
4 tbsp of coconut nectar
½ cup of coconut milk (substitute with almond milk if you like)
⅓ cup of dairy free dark chocolate (or your own favorite chocolate)
How-To:
Mix the almond flour, coconut flour, and sea salt in a large bowl. Stir well to combine. Then, add vanilla extract, coconut oil, coconut milk and coconut nectar. Mix well. The consistency should be lumpy. You can test it by pressing it between your fingers--if it’s sticky, then you’re good to go. Lastly, mix the chocolate in.
Let sit in your freezer for 15 minutes before taking it out and rolling the dough into a ball size of your preference. Put the dough balls onto parchment paper before putting them back into the freezer for an added 30 minutes.
Then, take them out and enjoy! These babies can last in your fridge for up to a week if you don’t finish them all--but let’s be real, you probably will.
