SIMPLE ROASTED ASPARAGUS

In honor of Earth Day, we’re sharing one of our favorite recipes that’s vividly green and good for the planet. This Simple Roasted Asparagus is a super delicious and Earth friendly recipe made purely of plants.

Asparagus is a bright green veggie packed with vitamins A, C, E and K and minerals that offers major healthy perks. Thanks to all these nutrients, Asparagus helps strengthen your immune system, reduces bloating and aids a healthy balance of good bacteria.

INGREDIENTS:

1 bunch thin asparagus spears, trimmed

3 tablespoons olive oil

1 clove garlic, minced (optional)

1 teaspoon sea salt

1/2 teaspoon ground black pepper

1 tablespoon lemon juice (optional)

HOW TO:

1. Preheat an oven to 425 degrees F.

2. Place the asparagus into a mixing bowl, and drizzle with olive oil. Toss to coat the spears, then sprinkle with garlic, salt, and pepper. Arrange the asparagus onto a baking sheet in a single layer.

3. Bake in preheated oven until just tender, 12 to 15 minutes depending on thickness. Sprinkle with lemon juice before serving (optional). Enjoy!
