Salad Inspired Sandwich: Roasted Beets, Avocado & Arugula
Made with buttery avocado, silky beets and California "black bread", this sandwich recipe was assembled using ingredients by one of my favorite arugula salads.
And we can't forget about the beauty benefits of this sophisticated beet sandwich.
The juicy red roots are an excellent source of antioxidants, making them great at fighting free radicals and help prevent wrinkles and fine lines.

2 medium beets, roasted and sliced into 1/2-inch thick rounds
1 cup arugula (or mixed greens)
vinaigrette of your choice
4 slices black bread or pumpernickel
1/2 of an avocado, cut into thin slices
Optional toppings: slivered almonds, soft goat cheese as a spread
1. Roast the beets and then once cool, slice them horizontally into 1/2-inch thick rounds.
2.In a small bowl mixed your greens with vinaigrette.
3. Next toast your bread.
4. Then to make each sandwich, place a handful of greens on one side of the bread (spread cheese first if preferred), then top with beets and avocado slices. Enjoy x
