Beyond shopping organic, sustainable ingredients at your local farmer’s market, there are so many ways to be eco-friendly in the kitchen. One of our favorite ways is using extra ingredients to create new recipes! The tops of carrots are a perfect example of an ingredient people think to throw out, but can actually make delicious combinations!
Here is our recipe for a vegan carrot top pesto that is good for your taste buds & even better for the 🌎!
Carrot top greens from 1 bunch of carrots (~1 cup)
¼ cup Pine nuts
3 Garlic cloves
⅓ cup Olive oil
3 tbsp Lemon juice
¼ cup Mint leaves
1 tsp Salt
2 tsp Pepper
1. Combine all ingredients in a food processor or blender & Bon Appétit!
We love this on pasta or as a dip with veggies. x
