Strawberry Peach Chia Jam
It’s not a coincidence that most water rich fruits and vegetables are in season during the summer. Eating fruits and vegetables abundant with water is a healthy alternative to plain water. This recipe is a perfect way to eat your water - strawberries contain a high water content of 92%! This Strawberry Peach Chia Jam is perfect for summer picnics or breakfast on the go. It’s quick and simple!
3/4 C. Peach, Diced Small
1/4 C. Strawberries, Hulled & Diced Small
1 Tbsp. Chia Seeds
1 Tbsp. Lemon Juice
Toss the fruit into a blender or food processor and blend until smooth to your liking. Pour the fruit into a small airtight container. Add in chia seeds, lemon juice. Stir to combine. Seal the container and set in the fridge for at least 30 minutes for the chia seeds to work their magic. When ready, remove from the fridge and enjoy! Serve on toast, in a parfait, or any other way you see fit.
