Raw Cacao Avocado Mousse & Banana Coconut Cream
The great news about eating mostly raw is that desserts are just AMAZING.
Here are two of my favorite raw desserts -- absolutely delicious, beauty nutrient-packed, complimentary to each other and sure to appeal to both raw foodies and regular eaters alike!
Sweet, Easy & Raw Avocado Cacao Mousse
Ingredients:
4 medium ripe avocados
1/3 cup raw coconut nectar or maple syrup
1/2 cup raw cacao powder
1 tsp vanilla extract
Pinch of salt
Fresh fruit or nuts for garnish
How-To:
In a medium bowl or food processor, blend the avocados until smooth. Add all other ingredients, blending until mixture is fluffy and smooth. Chill for about 2 hours in the fridge or 30 minutes in the freezer. Garnish and serve.
Delicious, Creamy & Raw Coconut Banana Cream
Ingredients:
1.5 cup cashews
1/2 cup melted coconut oil
7 dates (varies on sweetness desired)
1/4 cup lemon juice
1 banana
1 cup coconut milk
2 tsp vanilla extract
1/2 tsp salt
How-To:
In a medium bowl or food processor, blend everything until smooth. Pour into 4-6 small serving cups then chill overnight or until set.
