Minty Fresh Salad

Hi everyone! Maria here from Spinach for Breakfast! I think I found my staple summer recipe! I absolutely love fruit, but during this pregnancy I just can’t get enough! I put a spin on my traditional bowl of fruit salad and added mint and lime for a super refreshing flavor. Plus mint has so many health and skin benefits. It is said to contain antioxidants, anti-inflammatory agents, and can help with digestion. It is also said to help clear skin bacteria, soothe skin, and even reduce pimples.

I’m currently using Odacité’s Mint + Green Tea Hydra-Purifying Treatment Mist to hydrate my skin and prevent any breakouts this pregnancy. It’s working wonders!

Minty Fruit Salad recipe below!

INGREDIENTS:

4 cups of diced watermelon

1 1/2 cups of blueberries

1 1/2 cups of raspberries

2 cups of halved strawberries (stems removed)

3 tablespoons of chopped mint

1/4 cup of fresh lime juice

1 teaspoon of honey (omit if vegan)

HOW-TO:

1. Add all of the fruit and mint to a large bowl.

2. Whisk together the lime juice and the honey.

3. Pour over the fruit and gently mix through.

4. Chill in the fridge for 10 minutes before serving.
