Beet Hummus
We’re all familiar with how addicting hummus can be — it starts off as a small snack, and suddenly you’ve hit the bottom of the container and you’re wondering where the last hour went! Thankfully, there’s an easy way to sneak in some amazing health benefits while you’re snacking. We added a twist on classic hummus by putting beets in ours. Beets are high in Vitamin C, manganese, fiber, and potassium — which all help to detox the body and leave your skin glowing. Pair it with some veggies (or even use it as a spread on a sandwich!) and you’ve got an awesome superfood snack.
Ingredients:
1 small roasted beet, chopped
1 can (about 2 cups) chickpeas, drained
1 tablespoon lemon juice
Salt and pepper, to taste
2 tbsp tahini
2 small cloves of garlic
2 tsp sunflower seeds
How-To:
1. Place the beets and chickpeas in a food processor and blend until combined, about 20 seconds.
2. Add everything but the sunflower seeds and blend until smooth.
3. Place in a bowl and top with sunflower seeds.
4. Serve immediately, or keep for up to a week in your refrigerator.
