3 cups of spinach
1 large pomegranate (or 1 cup of deseeded arils)
1 cup blueberries
Mint for garnish
1 tbsp dijon mustard
1 tbsp lemon juice
3 tbsp olive oil
1. Combine all salad ingredients in a bowl.
2. Combine dressing ingredients. Drizzle on the salad.
3. Garnish the salad with mint & enjoy! x
